What is MICHELIN?

The MICHELIN Guide is a globally recognized guide that rates the quality of restaurants and hotels. Founded in 1900 by brothers André and Édouard Michelin, it started as a tool for motorists with information about maps, gas stations, and restaurants.

Today, the MICHELIN Guide is the reference for culinary experiences. Restaurants can receive one, two, or three Michelin stars. Receiving a Michelin star is a great honor and can significantly boost a restaurant's success.

The meanings of the stars are as follows:

  1. Very good cuisine
  2. Excellent cuisine, worth a detour
  3. Exceptional cuisine, worth a special journey

For example, the Netherlands has one restaurant with three Michelin stars, while France has 30, most of which are located in Paris.

MICHELIN Experience with Air France

Jérôme Banctel and Josselin Marie join Air France's culinary team. Jérôme Banctel, awarded three Michelin stars and chef of Le Gabriel in Paris, brings his refined and innovative French cuisine onboard.

Josselin Marie, chef of La Table de Colette, is known for his responsible cuisine and focuses on using fresh, local, and seasonal ingredients. Together, they enhance the culinary experience for passengers.

I wanted to offer travelers a glimpse of my cuisine, a mix of gastronomic refinement and unexpected flavors.

Onboard

On short- and medium-haul flights, Air France offers a wide selection of dishes. Michelin-star chef Michel Roth creates a varied menu together with Josselin Marie. This duo combines traditional French haute cuisine with modern, responsible vegetarian options.

On intercontinental flights, chef Jérôme Banctel ensures a top-level culinary experience in Business Class. Inspired by his native Brittany, the three-star chef creates dishes that are appreciated worldwide. His menus change every eight months to continually surprise travelers. For desserts in Business Class, pastry chef Nina Métayer provides refined and creative sweets.

In the La Première cabin, three-star chef Glenn Viel will continue to create the entire menu until the end of November, while pastry chef Philippe Rigollot ensures refined desserts. In the Premium cabin, one-star chef Frédéric Simonin continues to surprise travelers with carefully prepared dishes.

In Airport Lounges in Paris

Alain Ducasse and his team will be responsible for the refined dishes in the La Première lounge at Paris-Charles de Gaulle, including the famous coquillettes with ham and black truffle and the delicious rum or Armagnac baba. They have also developed new dishes for the long-haul lounges in terminal 2E.
